Quick Chicken Stew

• 2 De-boned Chicken Thighs
• 1 Onion
• 2 Carrots
• 2 Small Potatoes
• 1 Cup Water
• 1 tsp Flour
• 1 tsp Butter
• 1 Chicken Stock Cube
• Olive Oil
• Salt and Pepper
1. Preheat oven to 200 Degrees Celsius
2. Season your chicken thighs with salt and pepper, and brown both sides in a pan.
3. While browning your chicken, roughly chop your onion and then toss into the pan after removing your chicken.
4. Once your onions begin to change in color, toss in the carrots and onions. While your vegetables cook, roughly chop your chicken thighs and then toss back in the pan, along with more seasoning, flour, water, and chicken stock.
5. Once your oven is preheated, put your mixture into an oven safe dish, and cook for roughly 30 minutes.

Tuscan Styled Roasted Chicken

• 4 Chicken Drumsticks
• 4 Small Tomatoes
• 1 Green Pepper
• 1 Red Onion
• 1 tbsp Balsamic Vinegar
• Olive Oil
• Salt and Pepper
• Stale Bread
1. Preheat oven to 200 Degrees Celsius
2. Score your drumsticks to ensure the meat cooks evenly and place on your roasting tray. After that dribble over top some olive oil and balsamic vinegar, then sprinkle with salt and pepper. Toss into the oven.
3. While your chicken cooks for roughly 10 minutes, roughly chop the stale bread, green pepper and red onion into large chunks. Take your cut vegetables, whole tomatoes, and bread and dribble with oil, vinegar and season well.
4. Pull out your tray with chicken and add in your vegetables and bread mix. Cook for roughly another 30 minutes, or until your chicken is fully cooked.
